Pan Fried Tamarind Fish – Stingray/Ikan Kembong

1 piece stingray
4 pieces Ikan Kembong

Seasoning Ingredients
2 tbsp curry powder
2 tbsp chilli paste
1 tsp turmeric powder
2 stalks lemongrass – pounded into paste
Juice of 1 lime
1 tbsp minced garlic
1 tbsp light soy sauce
Salt to taste
1 tsp sugar

Oil for frying

1) Washed stingray and ikan kembong, set aside.
2) In a large mixing bowl, add in seasoning ingredients and mix everything evenly. Add in stingray and ikan kembong. Marinade for about 4-6 hours.
2) Heat oil in pan and pan fry stingray/ikan kembong until golden brown and cooked through.
3) Transfer to serving plate and serve hot with Cencaluk Chilli Padi Sauce.
