Sin Chow Mai Fun (Singapore Fried Noodles)

Ingredients (serve 5 -8 pax)
1 packet bee hoon – soaked till soft, drained and blanched in hot water for 1 minute, drained and set aside
2 eggs – (make omelette and cut into strips)
50 g chicken meat (cut into strips and marinade with salt, corn flour and a bit of red colouring for 15 minutes)
100 g small prawns – shelled
1 tbsp dried shrimps – soaked till soft and pat dry
1/2 big onion – sliced
2 cloves garlic – minced
3-4 dried red chillies
1 tbsp meat curry powder
2 fresh shitake mushrooms – cut into strips
1/2 carrot – cut into thin stirps
2 pieces tau pok – cut into strips and fry till crispy, set aside
1 bowl of shredded wong bok cabbage
1 bowl of bean sprouts
1/2 bowl of Koo chye hua
1 fresh red chilli – cut into strips

Sauce Ingredients
1 tbsp oyster sauce
1 tbsp abalone sauce
2 tbsp light soy sauce
1 tsp mushroom powder
1/2 tsp Knorr All-In-Seasoning powder
1/2 tsp white pepper
1 tsp dark soy sauce
80 ml water

1) Heat oil in a wok and fry dried shrimps till fragrant, add in onion, garlic, dried chillies and continue to stir fry for 1 minute.
2) Add in shitake mushrooms, prawns & chicken, stir fry for another minute or two. Sprinkle in the curry powder and stir to mix well. Add in the sauce ingredients and bring to a boil. Add in bee hoon, vegetables and using a pair of chopsticks, toss and fry to well combined. Add more water if it is too dry. Continue to stir fry till liquid evaporates and mixture is almost dry.
3) Dish out to serving plate and top with crispy tau pok strips, cut red chillies. Serve with cut red, green chilli padi & minced garlics soy sauce.
