1/2 kg medium/big prawns
2 stalks spring onion – cut into 3 inch sections

2 tbsp dried shrimps – soaked till soft and pounded

Sauce Ingredients
2 tbsp oyster sauce
1 tbsp abalone sauce
2 tbsp light soy sauce
1/2 tsp white pepper
1/2 tsp salt
1/2 tsp salt

3 tbsp water

1 tbsp shaoxing jiu

Minced ingredients
2 red chilli
3 cloves garlic
7 slices ginger
White part of spring onion

1) Clean prawns, trimmed away feelers and deveined but heads and shells remain intact. Marinade prawns with sauce ingredients for about 1 hour. Just before deep frying, coat with some corn flour.
2) Heat oil in a wok till hot, deep fry till 1/2 cooked, drained and set aside. Keep marinated sauce from the prawns marinade to be used later.
3) In a clean wok, heat 1 tbsp oil, saute pounded dried shrimp till fragrant, add minced ingredients and stir fry till fragrant. Add in retained sauce marinate sauce, 3 tbsp water and stir till it boils. Add in the prawns and spring onions, stir fry briskly for a minute and taste accordingly and adjust to your preference. Drizzle the shaoxing jiu over the sides of the wok. Stir fry briefly for a second and transfer to serving plate.
