Oyakodon (Fried Crispy Chicken Breast meat & Eggs in Mirin Sauce)

Oyakodon 1

1 chicken breast meat
Cooked rice (Japanonica rice)
2 beaten eggs
Shredded Nori
Chopped spring onions
Panko bread crumbs
Flour for coating
Egg for egg wash

Marinade Ingredients
1/2 tsp of salt
Dash of pepper
1 tsp of corn flour

Sauce Ingredients
1/2 cup sliced onions
90 ml chicken stock
11/2 tbsp light soy sauce
2 tbsp mirin
1/2 tbsp sugar

1) Season meat with marinade ingredients and set aside for 20-30 minutes. Dredge in flour, egg wash and coat with panko breadcrumbs. Deep fry till chicken is done, brown and crispy. Slice and set aside.
2) In a small saucepan over medium heat, add onion and sauce ingredients. Bring to a boil, add sliced chicken, pour in the egg around the chicken. Cover with a lid and cook till eggs are at your desired doneness.
3) Slide the egg and chicken over the cooked rice, garnish with spring onions and shredded nori. Serve hot.
