Chocolate Milk Muffin

125 g butter
100 g castor sugar
2 eggs
50 ml fresh chocolate milk
1 tsp vanilla essence

1/2 tsp baking powder
100 g Self Raising Flour
25 g coco powder
(Sieve flour, coco powder and baking powder and SRF flour 2 x)

Chocolate bar – for topping
Strawberries – for topping
1 tbsp icing sugar

1) In a mixing bowl, cream butter and sugar till light and creamy. Add in eggs one at a time and beat it in.
2) Add in vanilla essence and mixed evenly, add in flour mixture and chocolate milk alternately ( flour >milk>flour>milk). Mix till well combined, DO NOT overmix.
3) Line muffin pan with paper cup, filled till 3/4  full. Baked in pre heated oven 180 C  for 20 – 25 minutes or till cooked.
4) Remove from oven and sprinkle with icing sugar and topped with a piece of chocolate bar and a slice of strawberry.

200 ml fresh milk
600 g fresh mango
11/2 tbsp sugar

160 ml melted SCS butter
2 large eggs
320 g Self Raising Flour
140 g icing sugar

1) Pre heat oven to 190 C.
2) Blend mango flesh and sugar till smooth. Line muffin pan with cupcake liners.
3) In a mixing bowl, combine milk, 200 g of mango puree and mix with a hand whisk. Add in butter and egg. Stir to combine well, slowly add in sugar and flour. Roughly mix the mixture till just combine (DO NOT OVERMIX).
4) Spoon 1 tbsp or tsp of batter into each pan holem followed by 1 tbsp/tsp of mango puree. Cover the top with batter till almost full. Place muffin pan in the pre heated oven and bake for 25-30 minutes or until the top have puffed up.
6) Remove muffin pan from oven and leave to cool. Lastly dust some icing sugar over muffins before serving.

250 g cake flour
110 castor sugar
2 large eggs
120 ml corn oil/melted butter
125 ml plain yoghurt
1 tsp vanilla
1 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
80 g raisin
80 g chocolate chips

1) Sift flour, baking powder, bicarbonate of soda and salt into a mixing bowl. Add in sugar, raisin and mix well.
2) Whisk egg, oil, yoghurt and vanilla till well mixed.Do not overmix. Pour the egg mixture into flour mixture, Mix just combined and do not OVERMIX.
3) Using a ice-cream scoop, scoop batter into paper line muffin pan, about 3/4 full, scatter some chocolate chips on top.
4) Bake in pre-heated oven (200 C) for about 20-25 minutes or until golden brown. Test skewer till it comes out clean. Leave muffins in pan to cool. Serve warm.
