Braised Soy Sauce Chicken Wings



8-10 mud joint chicken wings

Seasoning Ingredients
1 tbsp light soy sauce
1/2 tsp pepper
1 tsp corn flour

Sauce Ingredients
250 ml water
1/2 tbsp oyster sauce
3 tbsp light soy sauce
1/2 tbsp dark soy sauce
1 tsp Sesame oil
1/2 tsp sugar

1-2 inch ginger – smashed
3 cloves garlic – smashed
3-4 stalks of spring onions
(White parts cut into 1 inch in length)

1 tsp corn flour mixed with 1 tbsp water
1/2 tbsp Chinese cooking wine

Marinade chicken wings with seasoning ingredients and set aside for 20 minutes.
Heat wok with 2 tbsp oil until hot and stir fry ginger, garlics and spring onions until fragrance. Put in chicken wings and toss until they changed colour. Sprinkle in the cooking wine and stir fry until well mixed.
Pour in sauce Ingredients and bring to a boil. Cover and cook over low heat for 15 minutes or until chicken is tender. Thicken with corn flour mixture.
Serve hot.
