Oreo Sponge Cake

Ingredients
Egg yolk mixture
5 large egg yolks
1 whole egg
60 g corn oil
1 tsp vanilla essence
60 ml fresh milk
70 g cake flour
50 g corn flour
1/2 tsp baking powder

60 g Oreo Cookie (remove cream and pounded finely)

Meringue
5 large egg whites
1/2 tsp cream of tartar
100 g icing sugar

Method
1) In a mixing bowl, beat egg yolk, whole egg,  oil, milk and vanilla essence until well combined. Fold in flour gradually until just incorporated.
2) In a clean mixing bowl, beat egg whites till frothy, add in cream of tartar and whisk till soft peaks form. Gradually add in sugar and whisk till stiff peaks form.
3) Transfer 1/3 of the meringue to the egg yolk mixture and beat it in. Gently fold in the remaining meringue into mixture in 3 batches. Mix till well combined and no white streaks remain.
4) Divide mixture into 2,  add in the oreo powder to one portion,  mix till well combined. pour into lined 8 x 8 ” lined square cake pan, then add the plain batter on top. Tap on table top a few times.
5) Use a large baking tray for a hot water bath and pre heat oven to 150 C and bake for 45 minutes .
6) Once baked, leave to cool for 15 minutes and remove from cake tin.
