Mui Choy Chicken

1 whole chicken – cut into 4 parts
2 tbsp dark soy sauce

200 g sweet Mui Choy
30 g salty mui Choy

4 slices ginger
6 cloves garlic

Sauce Ingredients
1/2 cup light soy sauce
1/2 tbsp sugar
1 tbsp oyster sauce
4 small rock sugar
Pepper to taste
1/2 tbsp fish sauce
3 bowls of water
1 tsp chinese cooking wine
Corn flour solution

Season chicken with dark soy sauce for an hour. Pan fry chicken parts till brown on both sides. Dish out and set aside.
Heat 2 tbsp of oil in a clay pot, saute ginger, garlic and mui choy. Add in water, sauce ingredients and bring to a boil. Lower heat to medium low and stew for 25 minutes.
Add in chicken, cover and continue to stew chicken and mui Choy us tender and soft. Taste according and thicken with corn flour solution to your preference.
