250 g unsalted butter
270 self raising flour
1/2 tsp salt
1/2 tsp baking powder
(sieve flour, salt & baking powder together)
240 g mashed banana
60 g walnut – chopped into small pieces
Eatra Slice banana & walnut for toppings on the surface of cake
30 g shaved gula melaka
1 piece of Diamond Baking paper (for lining the cake pan)
4 egg yolk
120 g shaved gula melaka
1 tsp vanilla essence
40 ml fresh milk
4 egg whites
60 g sugar
1) In a mixing bowl, cream butter and gula melaka till well mixed. Add egg yolk one at a time and beat it in before adding the next. Beat in the vanilla, fold in 1/2 of the flour , add 1/2 of the mashed banana, mix to combine well. Add the remaining flour and banana, fold it in. Add chopped walnuts and mix in gently. Scrape the bowl and give a final mix. Set aside.
2) In a clean mixing bowl, whisk egg whites till foamy, gradually add in sugar and whisk till stiff peaks form. Transfer 1/3 of the meringue to yolk batter. Beat it in. Gently fold the remaining meringue in 2 batches until all the egg whites have been incorporated.
3) Pour into a lined and greased 8 x 8 ” square baking pan. Arrange the slice banana and walnuts on the surface of the cake. Sprinkle gula melaka over it. Gently bang on a flat table top 2 times.
4) Bake in a pre heated oven (170C) for 50 minutes or until cake is cooked through. Let it rest for 5 minutes in the pan before carefully transferring onto wire rack to cool completely.
