Nasi Kunyit (Steamed Turmeric Glutinous Rice)

Ingredients
600 g glutinous rice
2 tbsp turmeric powder
500 ml water
2 pcs Assam keping
400 ml coconut milk
2 tsp salt
3 pandan leaves – knotted
1 tbsp white peppercorns

Method
1) Place the washed glutinous rice in a large bowl and add in water, turmeric powder, assam keping and water. Stir well and leave it to soak overnight.
2) Drain the rice well and dischard the assam keping and set aside the next day. Placed the soaked rice in a shallow tray or steamer, pour 1/2 of the coconut milk, peppercorns and salt, mix well, place the knotted pandan leaves into the steamer.
3) Cover and steam over medium heat for 20-25 minutes. Mix the rest of the coconut milk and mix well. Cover and steam for a further 15-20 minutes or till rice is cooked.
