Fried Sambal Lady’s Finger

Ingredients
12-15 stalks lady’s finger – washed and thinly sliced at diagonal angle
(pan fry in wok for 1-2 minutes), dish and set aside
1/2 tsp Salt
1 tsp sugar
11/2 tbsp  Cooking Oil

11/2 tbsp dried shrimps – soaked till soft, drained and pounded coarsely

Pounded Ingredients
3 red chilli
3 chilli padi
5 shallots
3 cloves garlic
1 inch toasted belacan

Method
1) Heat oil in a wok and saute pounded dried shrimps till fragrant. add in the rest of the pounded ingredients and continued to stir fry till fragrant, season with salt and sugar, taste accordingly and adjust taste if needed.
2) Add pan fried lady’s finger and stir to mix and toss briefly for 1 minute. Dish out to serving plate and serve hot.
