1 spring chicken (washed and split chicken by cutting thru’ the breast) set aside
3 tbsp light soya sauce
1 tbsp sugar
1/2 tsp black pepper
1 tsp lime juice
2 tbsp sesame oil, 2 tbsp oyster sauce
1 tsp salt, 1 tsp chicken powder
2 tbsp kicap manis
Put marinate ingredients in a bow and mix well. Pour over the chicken and marinate for at least 4-5 hours or best o/nite in a refrigerator.
Preheat oven to 160 /180 C for 10 mins. Place chicken on the wire rack and bake for at least 1/2 hour, basting chicken with marinade occasionally and turning chicken over every 10-15 mins.
Baked until chicken is golden brown or cooked thru. Cooked remaining sauce in a small pan over low heat. Pour over the chicken before serving.
