HK Oyster Sauce Chye Sim & Crispy Shallots

1 packet HK chye sim – washed and cut
2 tbsp crispy fried shallots
1/2 tsp each – salt and sugar
1 tsp oil

Sauce Ingredients (combined)
2 tbsp oyster sauce
1 tbsp mushroom sauce
1 tsp mushroom granules
1/2 tsp corn flour
1/2 tsp sugar
Salt to taste
50 ml water

1) Blanch chye sim in boiling water with salt and sugar for 2 minutes. Drain off excess water and lay them on a serving plate.
2) Pour the combined sauce in a saucepan and bring to a boil. Off heat once sauce thickens. Pour it over chye sim and topped with crispy shallots.
3) Serve immediately.
