Sambal Belitung aka Chui Chui

Ingredients
1 kg belitung – washed and snip of the ends
2 stalk lemon grass – bruised
Salt to taste
1 1/2 tsp sugar
100 ml water

Blended/pounded Ingredients
1 tbsp tauchu (salted soy bean)
5 red chillies
4 chilli padi
4 shallots
2 cloves garlic
1/2 inch fresh turmeric
50 ml water
1 tbsp Oil

Method
1) Heat oil in a wok and fry blended ingredients and lemongrass till aromatic and oil separates.
2) Add belitung, stir to well mixed and coated with the sambal paste for 5 minutes. Season with salt, sugar, seasoning powder and water and simmer over low heat till sauce thicken.
2) Dish out and serve hot.
