Sweet & Sour Sauce Prawns

Sweet & sour prawns

Ingredients
500 g medium-large prawns, cleaned and feelers trimmed off
1/2 tsp salt
1/2 tsp pepper
1 tsp corn flour
Oil for deep frying

Minced Ingredients
4 cloves garlic
5 slices ginger
2 red chillies and 4 chilli padi (add more if you want more spicy)

Sauce Ingredients (combined)
2 tbsp tomato sauce
3 tbsp Lingham chilli sauce
1 tomato – minced
1 tbsp white vinegar
1 tbsp apple cider vinegar
1 tbsp oyster sauce
1 tbsp light soy sauce
1 tbsp sugar
1/2 tsp salt
1/2 tsp pepper
100 ml water

2 tsps corn flour – mixed with 1 tbsp water

1 tbsp chopped spring onions and coriander leaves

Method
1) Season prawns with salt, pepper and corn flour for 20 minutes.
2) Heat oil in a deep saucepan and deep-fry prawns for 30 seconds. Drain from oil and set aside.
3) Heat a clean wok with 3 tbsp oil and saute garlics, ginger  and chillies till aromatic. Stir in combined sauce and bring to a boil. Return prawns to wok and stir to coat prawns with sauce until cooked.
4) Transfer to a serving plate and garnished with chopped spring onions and coriander leaves.

*** This sauce can be used to cook crabs or sotong. After thickening with cornflour, add
1 egg white.
