45 g Cai Poh, soaked for 10 minutes and drained
2 tbsp oil
2 cloves garlic – minced finely
1 tsp light soy sauce
1/2 tsp sugar
1/2 tsp sesame oil
1/4 tsp pepper
11/2 tsp corn flour
1) Beat eggs well with a fork and add seasoning ingredients. Mix well and set aside.
2) Heat a flat pan with 1 tbsp of oil and stir fry garlic and cai poh for 2 minutes over low heat. Remove and stir into egg mixture.
3) Heat pan again with remaining oil until hot. Pour in the egg mixture and cook over low heat until slightly brown. Turn over and cook the other side until slightly brown.
4) Dish out on serving plate.
