Sambal Dried Shrimp Butter/ Margerine Prawns

500 gm Tiger Prawns (Peelers trimmed)
4 tbsp Butter/Planta Margarine
salt and sugar to taste
1 tbsp curry meat powder
3 sprigs curry leaves
100 ml water
oil for deep frying the prawns

Marinade ingredients
1/2 tsp salt
1/2 tsp pepper
1/2 tsp sugar
1 tbsp cornflour

Minced Ingredients
5 shallots
3 cloves garlics
2 red chillies
5 chilli padi

30 gm dried shrimps – soaked in water till soft and minced coarsely

1) Season prawns with marinade ingredients for 20 minutes. Heat oil in a wok and deep-fry marinated prawns until just cooked. Drain from oil.
2) Heat margarine in a wok and saute the minced ingredients, curry leaves  and curry powder till aromatic, add  water and season with salt and sugar. Toss well  and taste accordingly.
3) Add in pre-fried prawns and toss well until coated evenly.Transfer to serving plate and serve hot.
