1 pkt small drumsticks (S$4.95 from Ntuc) washed and pat dried- cut a slit on the drumstick
125ml buttermilk or fresh milk + 1 tsp lemon juice
3 small onions-minced, 2in ginger-minced
1 tbsp chilli powder
1 tbsp chilli paste (add more if intenser spiciness is desired)
1 tbsp chicken curry powder
2 tbsp honey
1 tsp chicken powder
1 tsp pepper
1 tbsp corn flour
3 tbsp rice flour
1 tsp salt
4 tbsp all purpose flour
Oil for frying
1) Inside a large zip-lock plastic bag, place all the ingredients except rice flour, all-purpose flour and oil. Shake the plastic bag to make sure everything is mixed evenly.
2) Heat sufficient oil in a wok. Mix rice and all purpose flour inside another plastic bag, and then drop the marinated drumsticks one by one into it. Shake the plastic bag to ensure that the drumsticks are well coated.
3) Fry the drumsticks in the heated oil for 3-5 mins or until they are cooked (can air-fried). Serve with spicy chilli or tomato ketchup.
