Selar/Kembong Fish Stuffed With Spicy Paste

500 g selar fish
1 tsp salt
1 tsp turmeric powder
1 tsp corn flour

Blended ingredients
8 shallots
4 garlics
6 red chillies
8 chilli padi
80 g dried shrimps
2 stalk lemon grass
1 inch galangal
3 buah keras
1 stalk bunga kantan
1 inch roasted belacan

1 tbsp tamarind paste (mixed with 3 tbsp water) – strained
11/2 sugar

1) Cut the fish on both sides along the the backbone to form a pocket. rub salt, turmeric powder, cornflour on the skin. Set aside for 20 minutes.
2) Heat oil in the wok and saute blended ingredients until aromatic and oil seaprates. Add tamarind water, sugar and salt to taste. Stir fry till well mixed and dried. Set aside.
3) Heat oil in wok, deep fry fish till golden brown and done. Drain and stuffed the fish with fried paste, squeeze calamansi juice over it.  Serve with sambal belacan.
