Lotus Roots with Peanuts Soup
400 g lotus roots – peeled, washed and sliced
50 g dried cuttlefish
400 spare ribs – washed and blanced in boiling water for 3 mins. drained.
2 dried scallops
10 red dates
1 tbsp wolfberries
1 sweet-corn (optional)
2 tbsp red beans – soaked in hot water for 20 mins
2 tbsp peanuts – soaked in hot water for 20 mins
1/2 carrot – quartered
2.5 litres water
salt and pepper to taste
1) Bring water to a boil in a deep pot. Add in all the ingredients.
2) When it boils, reduce to low heat and simmer for 45 mins. Add in sweet-corn and simmer for a further 10 mins. Season with salt and pepper.
3) Remove from heat and serve hot.
