2 whole chicken legs – washed and cut into bite size (rub with salt and cornflour)
coriander leaves – chopped
chilli – sliced
Combined sauce ingredients
11/2 tbsp sugar
5 cloves garlics – minced finely
5 chilli padi – minced finely (add more if you want more spicy)
2 tbsp yellow bean paste
2 tbsp white vineger
3 salted plums (pitted and gently mashed)
1 tbsp water
11/2 tbsp cooking oil
1 tbsp light soy sauce
1) In a bowl, marinate the chicken with combined sauce ingredients. Transfer to a heat-proof plate. Leave in the fridge for 1-2 hours before steaming.
2) Steamed the marinated chicken over rapidly boiling water for 20 mins or unitl just cooked through. Serve hoy with coriander leaves and chillies.
