2 whole chicken legs – washed and cut into bite size (rub with salt and cornflour)
coriander leaves – chopped
chilli – sliced
Combined sauce ingredients
11/2 tbsp sugar
5 cloves garlics – minced finely
5 chilli padi – minced finely (add more if you want more spicy)
2 tbsp yellow bean paste
2 tbsp white vineger
3 salted plums (pitted and gently mashed)
1 tbsp water
11/2 tbsp cooking oil
1 tbsp light soy sauce
1) In a bowl, marinate the chicken with combined sauce ingredients. Taste accordingly and adjust to your preference. Transfer to a heat-proof plate. Leave in the fridge for 1-2 hours before steaming.
2) Steamed the marinated chicken over rapidly boiling water for 20 mins or unitl just cooked through. Serve hoy with coriander leaves and chillies.
Saute the combined sauce in a bit of oil till fragrant and oil separates. Add in chicken and mix well. Add enough water to cover the chicken, covered and stewed till chicken is soft and tender.
