6 egg whites
2 chicken fillet – minced
1 tbsp chopped mushroom
1 tbsp chopped carrots
1 tbsp green peas
385 ml soy bean milk (unsweetened)/1 can evaporated milk
2 tsp salt
1 tsp each – pepper and chicken powder
1 tsp corn flour coriander leaves and chiilies
1) Beat egg white, add soya bean milk, 1 tsp salt, 1/2 tsp pepper, 1/2 tsp chicken powder, sieved and steamed until firm.
2) In a saucepan, stir-fry minced fillet, mushrooms, carrots and green peas, season with salt, pepper and chicken powder. Stir quickly and remove from pan and scoop over steamed egg white. Sprinkle a bit of sesame oil and garnished with coriander leaves and chillies.
